This morning I wanted pancakes. Period. But alas! I was too lazy to actually make pancake batter, especially because Darling Husband doesn't eat much for breakfast during the work week and I would be eating by myself. So instead I thought... Smoothie of the Week! I was sure that I could make a pancake smoothie from the ingredients I had around the house.
Pancake Smoothie
Ingredients
- 1 1/4 cups of milk (any type)
- 1 scoop of vanilla protein powder of choice
- 1 T white chia seeds (optional)
- 1 T peanut butter
- 1 small, ripe banana
- 1 tsp. maple syrup (Grade B gives a rich maple-y flavor)
- Crushed ice (to preference)
Mix all ingredients into your blender of choice and blend for 15-30 seconds or until nice and smooth. The chia seeds, while optional, impart a nutty flavor that compliments the "pancake batter" well, though they do change the texture a bit. To me, this tasted exactly as if I had liquefied a prepared, well-topped pancake and that was exactly what I did. The bonus? This is actually healthy and packed with protein!
